Raspberry Tiramisu Cupcake
New Winning Recipe!

Thank you to everyone for writing in! A lot of you wrote in asking for more cupcake recipes, so I am sharing my winning Raspberry Tiramisu Cupcake Recipe. It's a moist vanilla cake soaked with esspresso and amaretto, stuffed with a fresh raspberry filling, ground chocolate, and topped with fluffy tiramisu buttercream.
Totally vegan and totally delicious!
(Serving: 12 cupcakes)
Ingredients:
Cupcakes
1 ½ cup flour
1 cup sugar
1 teaspoon baking soda
½ teaspoon salt
1 cup coconut milk, non-dairy milk, or water
½ cup canola oil
2 teaspoons pure vanilla extract
2 tablespoons apple cider vinegar

Soaking Liquid
1/3 cup amaretto
1 tablespoon instant espresso powder

Raspberry Sauce
1 cup raspberries (fresh or frozen)
½ cup agave or sugar
1 teaspoon pure vanilla extract
1 teaspoon lemon juice
1/8 teaspoon cinnamon
dash of salt

Frosting
1 tablespoon instant espresso powder ( I use Medaglia D' Oro brand. If you can't find espresso powder, you can use finely ground instant coffee.)
2 tablespoons amaretto liquor
1 tablespoon pure vanilla extract
1/4  cup refined coconut oil (I use Spectrum Organics brand, but feel free to use any brand that you find at your local natural foods market. If you cannot find refined coconut oil, use non-hydrogenated margarine or shortening.)
4 cups organic confectioners sugar
2 tablespoons water

Garnish (optional)
12 fresh raspberries
12 small mint leaves
½ cup raw cacao nibs or ground bittersweet chocolate

Procedure:
Cupcakes
Preheat over to 350.
Sift or whisk together flour, sugar, baking soda, and salt into a bowl. In a separate bowl, mix the coconut milk, oil, vanilla, and vinegar. Combine the wet and dry mixtures and whisk until thoroughly mixed. Distribute batter into lined cupcake baking pan, and bake for 15-20 minutes.

Soaking Liquid
Combine amaretto and espresso powder and set aside.

Raspberry Sauce
In small saucepan, cook raspberries and agave on medium heat on raspberries wilt down. Let simmer on low for 5 minutes until the mixture becomes a pourable consistency. Remove pot from heat and mix in vanilla, lemon juice, cinnamon, and salt. Taste and adjust sweetness by adding more agave if necessary. Let cool in refrigerator.

Frosting
Combine espresso powder, amaretto, and vanilla in small bowl and mix or swirl bowl until espresso powder has dissolved (about 1 minute). Beat coconut oil in large bowl with an electric mixer for about 1 minute, then add confectioner's sugar and espresso mixture.  Add 1 tablespoon of water at a time until desired buttercream consistency is achieved. I usually beat on high for about 5 minutes, scraping down the sides with a spatula often. Pipe or frost with a knife.

Assembly
Using a spoon, cut out a small hole from the top of each cupcake (scoop out about 1 tablespoon of cake) and discard. In the hole of the cupcake, layer approximately 1 teaspoon of soaking liquid, 1 tablespoon of raspberry sauce, 2 teaspoons of cacao, and piped frosting on top. Garnish with a raspberry and mint leaf. Enjoy!

I hope you'll share your recipe for the Ginger Nutmeg Spice Cupcakes, too. I am dying to make this recipe, Chloe. Just a bit confused about the filling in the hole of the cupcake. Is it 2 tsp. cacao on top of the raspberry sauce as in ground cacao nibs or is it cocoa or is it ground chocolate?

I finally saw your episode of CW. Not only did you wow the judges with ne'er a critique but there was never a moment where you weren't gracious and humble, even to the point of acknowledging your competitor's accomplishments regarding her display. She, however, was not so generous. Just goes to show how compassionate cooks are compassionate people. I think your win shows the viewers just what the term "vegan" encompasses. You were a wonderful example to those who look at vegans and say, "Huh?" (or worse!) Thank you!

Oh good, I was hoping you'd post this one. I LOVE tiramisu and I really liked the idea of adding raspberry.

I just wanted to say that seeing you win cupcake wars was a real inspiration to me. I am a vegan with a dream to have my own vegan bakery and cafe some day. I watch the food network all the time and am always getting flavor ideas to adapt to vegan cooking. Just a day or two before you won cupcake wars, I said to my husband, "There will never be a vegan show on the Food Network, will there?" I was feeling so sad and defeated and you just made my day. I know my dreams are within reach and I want to thank you for that.

WOW! you are such an inspiration! i would never think that vegan could taste so good! I just had a party recently and used both of your cupcakes in it and every one loved them! After every one was dying for the recipes(which I knew they would) so I already printed them out! By the way do you have a store or a place were you can purchace the cupcake? My didn't look as amazing as yours and probly didn't taste as good!

You were great on Cupcake Wars! I am so happy I saw the episode and found your blog. My daughter is highly allergic to eggs. I have easily adapted to it for most items but not for baked goods. I have looked at vegan recipes but none that I have read have received as many rave reviews as yours. Now that she is 6 she is always very sad when she can't have a cake like all of her friends for birthdays but with your recipes I will now be able to fulfill her request (and no one else will know they are eating anything vegan). I love that you share your recipes! The only thing is, how did you get the frosting so light colored...I love the shade. However, when I added the espresso powder mixture it turned quite dark. Would love some tips.

Hi, Chloe! I have a question about the Energy Egg Replacer. When you put it in your recipe are you mixing it with the water like the directions on the box say or are you just mixing the egg replacer powder with everything else? I am so grateful for the recipes that you have shared! I saw you on Food Network and got so excited! My daughter has egg and milk allergies and your recipes are perfect for her. The chocolate cupcakes are AWESOME!!

Hi Michelle! For my cookie recipe, when I use Egg Replacer, I just mix it in with the dry as if it was a seasoning! No need to mix it with additional water first. Adding the wet batter will be all that's necessary for it to work. Glad you and your daughter enjoyed the cupcakes! Best of luck!

Some technical questions: what's the trick to getting the frosting fluffy? Mine was very espresso-y and darker brown and seemingly firmer than yours which looks almost like buttercream. Feel free to substitute almond extract for the amaretto liquor. If you do not want to use that either, it will still be delicious if you use water instead. Best of luck!!

Congrats on cupcake wars. I made these cupcakes and they turned out great. I tried to make it as a cake in a 12" x9" baking pan but it is a soggy mess aghh please help. I have tried this twice now and both attempts had to go into the garbage

If you bake it in a cake pan it might take longer to cook in the center. Also, be sure to rotate it every 10 minutes. This recipe also might not yield enough batter for a 12 x 9 pan. You can try doubling it if it seems you need more batter. I hope this helps. Best of luck!

made this recipe over the weekend with a couple of changes. My sister is allergic to raspberries, so i used strawberries instead for the filling and whizzed it in the food processor to smooth it out. We mixed up the frosting and did half with chloe's and the other half with a vegan chocolate. All i can say is wow, both were amazing. Thanks again chloe

Okay..The Raspberry Tiramisu cupcakes came out fine, except the frosting! I can't find the refined coco oil(I live in nowhere land), so I used 1/4 cup of earth balance buttter. The frosting was a caramel color and was more on the liquidy side. I am gonna try again..and the raspberry sauce I used as a jelly for my toast this morning!! Delish!! Hi Chloe, I have to say that I'm not a Vegan or a Vegetarian, but i do like being healthy. I saw you on cupcake wars and since i love desserts, especially cupcakes i became very curious after you said what was in your cupcakes. I found your site and made the Chocolate strawberry shortcake cupcakes and it was a hit in my house, i really liked the simple flavors and cant wait to try the Tiramisu. not to mention your food recipes. Hi Chloe,

I live in Florida and even though the A/C is on my coconut oil turned into a liquid. Can I refrigerate it so that it will harden back up for the frosting?

Hi Gina!
Yes, I would suggest refrigerating the coconut oil so that it solidifies. You should try this. In the warmer months, I prefer to use margarine or non-hydrogenated shortening instead of coconut oil to avoid this problem. Best of luck with your baking!

Thanks for the great recipes. My nephew's birthday is tomarrow and he has nut and dairy allergies. I made the vanilla cupcakes, Yum. and for my daughter and him I made the chocolate cupcake and substituted the flour and soda for Pamelas baking mix, she has a sensativety to Gluetin. The taste was great but they really didn't rise very well. Any suggestions thanks Anne

I was also wondering what flour to substitute in your cupcake recipes that is gluten-free? And have you worked with any sugar substitutes for sweetening? My daughter is pre-diabetic, though loves cupcakes! If I reduced the sugar or substituted here and there.... have you experimented with this?
